Owned and run by Stefanos, Maria and family, the restaurant uses only fresh produce in its kitchen - much of which is grown on their nearby farm and market-garden. This includes fruit and vegetables; olives and olive oil; grapes and wine; eggs and nuts. In addition, herbs are gathered from the surrounding fields and either used fresh or dried. Water comes from their spring and honey from local beehives.
