Gavalas Winery vinifies the most vibrant variety in Greece, Assyrtiko, as well as Aidani, Mandilaria, and Mavrotragano. In order to show the richness of the land, they are the only winery in Santorini that vinifies the indigenous rare varieties of Katsano and Voudomato.
